10 Minute Vegan Mac & Cheese with Broccoli

Description: This quick and comforting mac and cheese features Wild Root's Farmhouse Mature cheese blended into a rich, creamy sauce. The strong, distinctive flavour of Wild Root's Farmhouse Mature creates an indulgent cheese sauce that's perfect for cosy winter evenings. Add broccoli to cut through the richness, or serve with a peppery green salad for a complete meal.

Ingredients:

For Cheese Sauce:

  • 1 block Wild Root Farmhouse Mature

  • 1 cup plant-based milk

  • 1/2 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp black pepper

For Pasta:

  • 400g pasta

  • 300g broccoli florets

  • Black and white sesame seeds

Method:

  1. Bring a pan of water to the boil, add a pinch of salt and pasta and simmer as per the instructions on the packet. 5 minutes before the pasta is done, add the broccoli florets.

  2. Meanwhile, add all of the sauce ingredients to a blender and blend until very smooth. Taste and adjust seasoning if necessary.


  3. Once the pasta is done, drain it but keep 1/4 cup of pasta water.

  4. Add the pasta and broccoli back to the pan, along with the sauce and the 1/4 cup of pasta water. Place back on the heat and warm through.


  5. Once heated up, spoon into a large serving bowl and garnish with sesame seeds.
